Boneless barbecued kid with grilled polenta – Tregnago Restaurant 1908

Ingredients for 4 people

boneless kid 1 kg

fresh bacon 200 gr

lemon 1

lard 250 gr

garlic 2 cloves

rosemary, salt and pepper to taste.

white wine Soave Classico

yellow polenta fioretto 500 gr


Prepare minced garlic, lemon peel, salt, pepper and rosemary. Open the kid by the book and season the meat with this mince, then lay the bacon on top and roll the kid. Baste the kid with lard so as to protect it during cooking. Tie it with food-grade twine. Prepare the oven at 160°. Place in the oven for 30 minutes. Then wet with Soave Classico and finish cooking.

Once cooled, form slices 2 cm high and pass them over the coals. Serve with polenta that you have previously placed on the grill.
