Does alcohol freeze?
Pure ethyl alcohol freezes at -114° C, while water freezes at 0° C. In order to freeze alcohol, a proportion of water and sugar must be added, which is why ice lollies of any kind always have a base of sweetened syrup. The alternative is a high-powered freezer that reaches temperatures below -114°C.
Sparkling wine popsicle recipe
First prepare a syrup made from water and sugar (50 ml water and 40 g sugar). Use a small saucepan and let the sugar dissolve completely in the water over low heat. Let everything cool down and then add 300 ml of sparkling wine. Pour the liquid into popsicle moulds and leave to cool in the freezer for a few hours.
If you don’t have moulds you can use paper cups, but then it will be difficult to keep the stick straight, which will have to be inserted anyway after two hours in the freezer.
Sangria Popsicles
Fresh fruit and a light alcohol content make these popsicles very refreshing.
Dilute the sangria with water to make sure the popsicles solidify (so keep a ratio of one part water to two parts wine). Cut the fruit into small pieces and place in the moulds, which then go into the freezer for at least 4 hours.
