Every great wine begins long before it reaches the glass.
At Cantina Cornelia T.E.S.S.A.R.I., the journey from grape to wine brings together nature, science, and generations of winemaking knowledge.
Now that Vendemmia 2026 is officially complete, we can look back on a wonderful season in the vineyard. We are grateful for the conditions nature has given us this year and excited to see what character and expression this harvest will bring to our upcoming vintages!
But the journey is only beginning.
Once our Garganega grapes arrive at the winery, the first stages of filtration and vinification begin. Through early morning starts, careful monitoring and attention to each stage, the Antonio and Nicola guide the transformation while preserving the character of the fruit and its origin.
At our winery, this process is particularly fascinating because we produce 11 different Garganega references, three of which are made using the appassimento method – the traditional drying of grapes before vinification.
Although they all begin with the same indigenous grape, each wine follows its own path. Drying techniques, grape maturity, fermentation conditions, and the decisions made throughout vinification mean that every reference requires a different approach. No two wines are intended to tell exactly the same story.
Leading this work is Antonio T.E.S.S.A.R.I., our third-generation winemaker, alongside his son Nicola, representing the fourth generation. Together, they combine decades of family knowledge with a thoughtful, individual approach to every wine.
For us, winemaking isn’t about applying one method to every grape. Grateful for our UGA territories and their unique micro-climaes, it is about understanding what each harvest brings and allowing each expression of Garganega to develop its own identity.
One indigenous grape. Eleven unique expressions. Generations of knowledge, guided by every new vintage.
