Not Just Wine…

Vineyards have long been the undisputed stars of our region, but it’s not that hard to spot the unmistakable silhouette of olive groves among the hills of Soave. In fact, tradition has it that some winemakers choose to dedicate even a small plot of land to growing olives. The Tessari family made this choice a few years ago and still makes the most of what nature offers by producing a limited quantity of olive oil, which they carefully store in their cellar for true enthusiasts. The olive variety is the classic one of the Soave region, the Grignano, with its characteristic yellow-green color, a light fruity aroma and flavor, a slight hint of bitterness, and a musky aftertaste. On the palate, it is bold and harmonious and pairs well with meat or fish carpaccio, boiled legumes, grilled meat, and grilled fish.
