Salmon Burger and Grisela Soave Classico

Salmon burgers are a main course that’s quick to prepare and very tasty—an original and light alternative to the classic beef burger. We recommend pairing them with Grisela Soave Classico DOC.

Ingredients for 4 hamburgers

  • Salmon fillet, skinned and boned, 400 g

  • 1 tablespoon chopped dill

  • 1 tablespoon of mild mustard

  • 2 small fresh spring onions

  • 1 fresh red chili pepper

  • 2 tablespoons of breadcrumbs

  • Eggs 1

  • Extra virgin olive oil, to taste

  • Salt to taste

  • Pepper to taste

Preparation

  1. To make the salmon burgers, first cut the skinless, boneless salmon fillet into small cubes: first cut it into strips about 1 cm thick, and then cut those into cubes. Also chop the 2 scallions, the dill, and half a fresh chili pepper, after removing the seeds from the inside.

  2. Next, place the salmon in a bowl, add the chopped scallions, chili pepper, and dill, and mix well. Stir in a tablespoon of mild mustard, and season with salt and pepper to taste. Finally, add one egg and two tablespoons of breadcrumbs. Then stir well to combine the ingredients.

  3. Divide the mixture into 4 equal parts, and with your hands moistened with water, shape them into 4 hamburgers. Coat a nonstick skillet with a very small amount of extra-virgin olive oil and cook the salmon patties for about 2 minutes on each side, flipping them halfway through cooking. Serve the salmon burger with some mayonnaise and a small green salad, or inside a bun.
